Vegetarian Recipes

INGREDIENTS:-

For Cheela

  • 1 cup besan (Gram flour)
  • 2 Tbsp rice flour
  • 1 tsp salt
  • 1/2 tsp cumin seeds
  • 3/4 cup water (for batter)
  • 4 tsp oil

For Filling

  • 3 cup cabbage (sliced)
  • 1/2 cup carrots (shredded)
  • 1/2 cup bell pepper (sliced)
  • 2 tsp oil
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 2 tsp coriander powder
  • 1/4 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1 tsp lemon juice

METHOD:- 

  • Mix all the dry ingredients properly together,i.e, besan, rice flour, cumin seeds, and salt. Now add water slowly to make a smooth batter with a consistency of Dosa batter. Set it aside.
  • For filling: Heat the oil in a frying pan over medium-high flame. The oil should be moderately hot then add cumin and mustard seeds to it. Now add cabbage, carrots, and bell pepper to it. Stir and fry for around one minute and then add all the other ingredients like coriander powder, chili powder, salt, sugar and lemon juice. Stir and fry for around 3-4 minutes. The vegetables should be crisp. Now turn off the heat.
  • For Cheela: Use a heavy pan and place it on medium-high flame. Test it by sprinkling a few drops of water on it.
  • Pour around 1/4 cup of the batter into the pan and spread evenly with a back of a spoon. Spread the batter in an outward motion and spread it evenly.
  • When the batter begins to dry then gently spread 1 tsp of oil over it. Wait around 30 seconds and flip over the cheela using a flat spatula.
  • Press the cheela lightly all around with a spatula to make cheela cook properly. Now turn the cheela and in the center of the cheela put about 1/2 cup oil.
  • Serve it with Coriander Chutney.

SPICY CORN CHAAT:-

It is a perfect spicy snack to satisfy the hunger of anyone. This chaat is very easy and takes very less time to prepare.

Vegetarian Recipes

INGREDIENTS:-

  • 3 and a half cup frozen corn kernels
  • 1 cup green and yellow bell pepper (finely chopped)
  • Half cup finely chopped tomato
  • 1 tsp ginger juice
  • 1 tsp salt
  • Half tsp black salt
  • 1 Tbsp cilantro (finely chopped)
  • 1 tsp cumin seed powder (roasted)
  • 1/4 tsp black pepper
  • 1/4 tsp red chili powder
  • 1 tsp green chili (finely chopped, adjust to taste)
  • 1 Tbsp lemon juice

METHOD:- 

  • Mix all the ingredients together such as salt, black salt, roasted cumin seed (powdered), black pepper, and chili powder. Set this mixture aside.
  • Take the frozen corn kernels and slightly squeeze out the water.
  • Coat a nonstick frying pan properly with oil and heat it over medium-high heat. Now put the corn kernels and stir continuously and fry for around 4-5 minutes. When some of the corns start to pop then turn off the heat.
  • After the corn returns back to the room temperature, add all the other ingredients like bell peppers, tomato, ginger juice, cilantro and lemon juice and add the green chili as per taste. Mix them properly.

CABBAGE PAKORAS:-

They taste delicious when served with Chutney and a hot cup of tea.

Vegetarian Recipes

INGREDIENTS:-

  • 3 cup cabbage (sliced)
  • 1 cup besan (gram flour)
  • 1/4 cup rice flour
  • 1 tsp cumin seeds
  • 2 tsp coriander powder
  • 1/2 tsp red chili powder
  • 1 tsp salt
  • 1/8 tsp asafoetida
  • 2 Tbsp cilantro (chopped)
  • 1 Tbsp green chilies (sliced)
  • Oil for frying

METHOD:-

  • Mix all the dry ingredients to the cabbage like besan, rice flour, cumin seeds, coriander, red pepper, salt, asafoetida, cilantro, and green chilly in a bowl. Mix them properly. Add water if needed to make a consistency of a sticky soft dough.
  • Heat the oil in a frying pan over medium-high flame. Heat the oil properly.
  • Place about one tbsp of the mixture holding with the fingers into the oil. Do not overlap the mixture.
  • Fry the pakoras in small batches. After turning the pakoras press them lightly.
  • This will take around 5-6 minutes per batch.
  • Fry the pakoras with occasional turning, until both the sides are golden brown in color.
